Easy Pumpkin Cheesecake Muffins



Ingredients

  2. 1 15 oz can pumpkin
  3. 1/4 cup vegetable oil
  4. 2 large eggs
  5. 1 (200g) cup sugar
  6. 1 teaspoon vanilla
  7. 1 1/2 cups (188g) all-purpose flour
  8. 1 teaspoon baking powder
  9. 1/2 teaspoon baking soda
  10. 1/2 teaspoon ground cinnamon
  11. 1/2 teaspoon ground ginger
  12. 1/2 teaspoon ground nutmeg
  13. 1/8 teaspoon ground cloves
  14. 1/2 teaspoon salt
  15. 1/4 teaspoon freshly ground black pepper
  16. FILLING:
  17. 8 ounces (200g) cream cheese, at room temperature
  18. 1 large egg yolk
  19. 5 tablespoons (75g) sugar
  20. 1/8 teaspoon vanilla extract
  21. Chopped nuts (walnuts, pecans) (optional)
